  Zhāopái xiāhuá – yòng xīnxiān xiāròu zuò de, QQ tán tán, zhǔ liǎng fēnzhōng jiù néng chī.
  Signature shrimp paste – made from fresh shrimp meat, very bouncy and chewy, cooks in two minutes and it’s ready to eat.

• 毛肚 – 这是牛的胃，切成薄片，在辣锅里“七上八下”，大概15秒，口感很脆。
  Máodù – zhè shì niú de wèi, qiēchéng báo piàn, zài là guō lǐ “qī shàng bā xià”, dàgài shíwǔ miǎo, kǒugǎn hěn cuì.
  Beef tripe – this is cow’s stomach, sliced thin. In the spicy pot, “lift up and down seven times” – about 15 seconds – the texture is very crispy.

• 肥牛卷 – 牛肉切得很薄，涮几秒就熟了，很嫩。
  Féi niú juǎn – niúròu qiē de hěn báo, shuàn jǐ miǎo jiù shú le, hěn nèn.
  Sliced fatty beef – beef cut very thin, swish it in the pot for a few seconds and it’s cooked, very tender.

• 冻豆腐 – 豆腐冻过之后有很多小孔，吸满汤汁，特别入味。
  Dòng dòufu – dòufu dòng guo zhīhòu yǒu hěnduō xiǎokǒng, xī mǎn tāngzhī, tèbié rùwèi.
  Frozen tofu – after tofu is frozen, it has many small holes, absorbs all the soup, very flavorful.
